Snow storm?

December 9th, 2009

We just had our first big snow here in IL. First it snowed then it sleeted then it snowed again. All together it made a slushy mixture that looks like snow on the top, but is water underneath.  Not very nice too walk on but it looks ok on the trees and bushes.  Yesterday we made a peppermint pie and then we ate it with peppermint tea, it was a really easy recipe to make.

For those of you who want it, here is the recipe:

No-Bake Pink Peppermint Pie

Graham Cracker Crust or Chocolate Cookie Crust

24 large marshmallows

1/2 cup milk

1 teaspoon vanilla

1/8 teaspoon salt

6 drops peppermint extract

6 drops red food coloring

1 cup chilled whipping cream

2 tablespoons crushed peppermint candy

Heat marshmallows and milk in a saucepan over low heat, stirring constantly, just until marshmallows are melted. Remove from heat; stir in vanilla, salt, peppermint extract and food coloring. Refrigerate, stirring occasionally, until mixture mounds slightly when dropped from a spoon.

Beat whipping cream in chilled bowl until stiff. Stir marshmallow mixture until blended; fold into whipping cream. Pour into crust. Refrigerate at least 12 hours. Just before serving, sprinkle with crushed candy.

Enjoy!

The peppermint pie looks really, really yummy Elizabeth! The same snow storm went through Wisconsin early this morning, near my home. We had about a foot of thick, wet snow to snow blow and shovel off the driveway this morning!

I have a question… Would you like an blog award? I won’t be offended if you do not care for one… I understand!
